This is one of my favourite dishes that I make at least once a fortnight.  Depending on my mood, the pie will have peas and carrots or just an assortment of seafood.  This pie is my version using smoked and fresh fish along with some crunchy carrots and onions.

 

This recipe serves 4 people

 

Ingredients

450 g/1 lb white fish

450 g/1 lb smoked haddock

1 cup frozen peas

2 large carrots chopped into squares

1 medium onion chopped and cubed

2 hard boiled eggs (optional)

1 cup milk (hot)

1 cup grated cheese

4 large potatoes

1/2 cup bread crumbs

 

For the cheese sauce

50 g/2 oz butter

40g/1.5 oz plain flour

600 ml/1 pint milk

1/2 cup grated cheddar cheese

 

Method

Place smoked & fresh fish in a large frying pan and pour hot milk over them.  Cover the pan and let the milk cool.  The fish will cook while milk is cooling down.

In the meantime, peel the potatoes, cut into 4 pieces and cook till very soft.  Drain, mash with butter & 1/2 cup cheese.  Season with black pepper and smoked paprika powder.

Make the cheese sauce by melting the butter in a pan over medium heat.  Add flour and beat until you get a smooth mixture.  Remove from heat.  Add milk a little at a time and beat well.  Bring this mix to the boil and cook for 2-3 minutes.  Finally add the grated cheese and stir till the cheese melts in the mixture and you get a smooth cheesy sauce.

If you are using eggs, boil them for 8 minutes, then once cooled, peel & quarter them. 

Drain the milk out of the pan and flake fish into chunks.  In a deep dish, put a ladle of cheese sauce, followed by fish and then the chopped carrots and onions along with peas.  Put another layer on and repeat till you end with a layer of fish on top.  Put the sliced eggs on the top layer.

Cover the dish with mashed potatoes.  Mix the rest of the grated cheese with bread crumbs and sprinkle on top.

Cook in pre heated oven for 25 - 30 minutes.  Oven temperature 200* (180 for fan ovens). 

 

There are a lot of versions of fish pie available and sometimes when I am feeling ultra lazy, I just mix everything together with the mashed potatoes, don't use any cheese sauce and just put a topping of bread crumbs beaten together with one egg.  Bake it for 25 minutes and you have a hot gooey mix of fish pie with crunchy carrots!
