This is a very simple sauce which I like to make when I am desperate to have pasta but don't want to stay in the kitchen for a long time!  You can use any type of pasta - I usually use shell or farfalle as they absorb the sauce well.

 

This sauce has a sharp taste so if you are not a fan, then swap white wine vinegar with balsamic vinegar for a sweeter taste.   You can also add chilli flakes for an extra kick to the whole dish.  This dish yields 2 generous portions.

 

Ingredients

1 tbsp Hoisin sauce

1 tbsp white wine vinegar

1 tsp soya sauce

1 tsp Worcestershire sauce

1 large onion chopped

1 tin chopped tomato

1 tsp mixed Italian herbs

1 tsp tomato paste

1 tsp basil & garlic paste

1 tbsp olive oil

1 cup grated cheese

1 small cup bread crumbs

2 cups pasta

 

Method

Mix all the ingredients except cheese and breadcrumbs in a pan and let the flavours develop by simmering for half an hour.

In the meantime, cook the pasta till al dente (with bite), drain and keep aside.

Blend the cooked sauce till you get a smooth texture.

Mix 2 table spoons of grated cheese into the sauce, add another splash of white wine vinegar and pour in a baking dish.  Mix the pasta with the sauce, sprinkle the cheese & breadcrumbs on top and place in a pre heated oven (200* C or 180* for fan ovens) for 20 minutes.

 

What you get is a bubbling pasta & sauce mix with a crusty cheesy top.  Have on its own or with garlic bread.
