| Spinach & Feta Cheese Parcels | ||||||||||||||||||||||||||||||||

These are my favourite to make when I am entertaining. They are easy to make and take no time at all to assemble. I tend to use frozen spinach as it comes in cubes and is easy when making portions. You can use fresh spinach if you want but make sure there is no moisture left after cooking otherwise the pastry will get soggy. The ingredients listed below are only a guide, you can use as much or as little spinach and cheese as you like.
Makes 6 - 8 parcels
Ingredients 16 frozen cubes of spinach, or equivalent of fresh 1 medium block feta cheese 1 tbsp red wine vinegar 1 egg (beaten) Salt & pepper to taste 1 packet puff pastry
Method of preparation
You can put any combination of vegetables in these parcels and your favourite cheese can be substituted for feta. I have also added roasted pine nuts to the parcels and they add a nice crunchy touch. Remove cheese altogether if you are a strict vegetarian and use water instead of egg.
