Spinach & Feta Cheese Parcels

These are my favourite to make when I am entertaining.  They are easy to make and take no time at all to assemble.  I tend to use frozen spinach as it comes in cubes and is easy when making portions.  You can use fresh spinach if you want but make sure there is no moisture left after cooking otherwise the pastry will get soggy. The ingredients listed below are only a guide, you can use as much or as little spinach and cheese as you like.

 

Makes 6 - 8 parcels

 

Ingredients

16 frozen cubes of spinach, or equivalent of fresh

1 medium block feta cheese

1 tbsp red wine vinegar

1 egg (beaten)

Salt & pepper to taste

1 packet puff pastry

 

Method of preparation

Pre heat the oven to 200 degrees (180 degrees for fan ovens).

In a pan thaw the frozen spinach and add the vinegar to marinate.

Start cooking the spinach and stir till all liquid dries.

Cool the mixture and add seasoning at this point.

Mix with the feta cheese and keep aside.

Roll the puff pastry out on a floured surface and cut into 6 or 8 round sections depending on what size you want.

Put the mixture in the centre of each circle and gather the corners till they join at the top like a parcel.

Squeeze the tops to seal and put all the parcels on a baking tray.

Brush with beaten egg and put in to bake for 15-20 minutes until the outside is golden.

Serve with a spicy tomato chutney (recipe coming soon) and chilled white wine (Muscadet).

 

You can put any combination of vegetables in these parcels and your favourite cheese can be substituted for feta.  I have also added roasted pine nuts to the parcels and they add a nice crunchy touch.  Remove cheese altogether if you are a strict vegetarian and use water instead of egg.
